Homemade spices (Chat Masala, Magic Masala, Tangy Masala )

  1. Chat Masala:

 

Ingredients:

  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon fenugreek seeds
  • 10-12 dried red chilies
  • 3 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon whole black peppercorns
  • 2 teaspoons mango powder (amchur)
  • 1 teaspoon ginger powder
  • 1 tablespoon fennel seeds
  • 10 cloves
  • 1 1/2 tablespoons panch phoron (a mix of five spices)
  • 1 tablespoon salt
  • 3 tablespoons black salt

Instructions:

  1. Dry roast each ingredient separately in a pan or skillet.
  2. Be careful not to burn them.
  3. Once roasted, grind all the ingredients together into a fine powder.
  4. Your delicious Chat Masala is ready to use.   

2. Magic Masala / Noodles Masala:

 

Ingredients:

  • 1 teaspoon chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon whole black peppercorns
  • 1/2 teaspoon fenugreek powder
  • 1/2 teaspoon mango powder (amchur)
  • 2 teaspoons tasting salt
  • 3 tablespoons black salt
  • 2 teaspoons chili flakes
  • 1 tablespoon cornflour
  • 2 tablespoons sugar
  • 1 teaspoon salt

Instructions:

  1. Blend all the ingredients together to make a fine powder.
  2. Store the masala in an airtight container or an airtight box.
  3. Your Magic Masala / Noodles Masala is ready for use.

3. Tangy Masala:

 

Ingredients:

  • 1 teaspoon fennel seeds
  • 10-12 dry red chilies
  • 1 teaspoon cumin seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon whole black peppercorns
  • 1/2 teaspoon black cumin seeds
  • 1/2 teaspoon cloves
  • 1 teaspoon mustard seeds
  • 1 teaspoon panch phoron (a mix of five spices)
  • 2 teaspoons black salt

Instructions:

  1. Dry roast all the ingredients lightly and cool them.
  2. Grind them into a fine powder.
  3. Store the Tangy Masala in a dry, airtight container.
  1.  Garam Masala:

 

Ingredients:

  • 12-14 cardamom pods
  • 4 pieces of cinnamon (medium-sized)
  • 4 bay leaves
  • 2 tablespoons black peppercorns
  • 1 tablespoon cloves
  • 2 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 1 tablespoon fennel seeds
  • 1/2 teaspoon mace
  • 1 small piece of nutmeg

Instructions:

  1. Dry roast all the ingredients until they release their aroma.
  2. Let them cool down and then grind into a fine powder.
  3. Store this Royal Garam Masala in an airtight container in a dry place.

These masalas can enhance the flavor of vegetarian dishes, vegetable items, or any meat dishes, adding both taste and aroma.
