Raw Mango Dal

Ingredients:
- 1 medium-sized raw mango
- 1/2 cup red lentils (masoor dal)
- 1/4 cup finely chopped onions
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/4 teaspoon turmeric powder
- Salt to taste
- 6 cups water
- For tempering: 2 tablespoons oil, 1 tablespoon minced garlic, 1 teaspoon minced ginger, 2 dry red chilies, 1/2 teaspoon cumin seeds
Instructions:
- Wash the lentils thoroughly and soak them in water for a while.
- In a pot, add the lentils, chopped onions, minced garlic, minced ginger, and turmeric powder. Pour in three cups of water and place it on medium heat.
- Once the lentils are almost cooked, mash them slightly with a ladle. Then add salt to taste and the diced raw mango.
- Pour in the remaining water and let it simmer on low heat. Keep stirring occasionally and cook until the lentils are completely cooked and the mixture thickens. If needed, add more water to achieve the desired consistency.
- In a separate pan, heat oil for tempering. Add cumin seeds, minced garlic, minced ginger, and dry red chilies. Fry until the garlic turns golden brown.
- Pour the tempering over the cooked dal and mix well.
- Serve hot with steamed rice. Enjoy!
